Detoxifying Orzo Salad

A perfect summer salad after a barbeque-heavy weekend. The Detoxifying Orzo Salad is anti-inflammatory, hydration-packed and filled with nutrients, including magnesium.
Ingredients
1 1/2 Cup Orzo
1/2 Cup Lentils
1 Garlic Clove
1/4 of a Shallot
1/4 of a Yellow Onion
1 Head of Dinosaur Kale (remove stems)
1 Baby Bok Choy
1 Celery Stalk (finely sliced)
1 Tbsp Butter (I use vegan)
1 Vegetable Broth Cube
1 Bunch of Chives
Olive Oil
Add orzo and lentils to a tall pot with 3 Cups of salted water. Bring to a boil and continue to add water as needed, while continuously stirring on medium heat.
Finely chop onion, shallot and garlic and add to a pan with olive oil. Cook on medium high until onion, shallot and garlic brown. Add the vegetable broth cube and a cup of water to the pan and reduce heat to medium.
Add bok choy, dinosaur kale and celery to the pan, continuing to stir.
Once the orzo and lentils have absorbed all of the water, add to the pan of vegetables and stir on low heat. Add butter and preferred spices to taste- salt, pepper.
Remove from heat and serve with fresh chives on top. For a *cheesy* version, top with nutritional yeast.
